Chef Trainer Chef Trainer at Mbali Mbali Lodges and Camps Ltd January 2025
Job Summary:The Chef Trainer will be responsible for overseeing all aspects of our kitchen operations, from training, menu creation, and food preparation to kitchen staff management. The ideal candidate will be a creative professional chef with extensive experience in high-volume kitchens, a keen eye for detail, and strong leadership skills.
Responsibilities:
- Train, and supervise kitchen staff, ensuring high standards of food preparation and presentation.
- Oversee the kitchen budget, including food costs and other expenses.
- Work closely with the management to set menu prices and plan special events.
- Ensure compliance with all health, safety, and hygiene regulations.
- Creating menu items, and recipes and developing dishes ensure variety and quality 6. Ensure meals are produced on time, and enough are available for the various areas
- Train the chefs to be able to meet the client’s dietary requirements.
- Ensure all staff are aware of their duties and what is expected of them
- Teach new staff skills they require to perform their roles to the required standard
- Delegate duties to the kitchen staff as per the menu requirements
- Oversee and monitor the work of kitchen staff to ensure all tasks are done as required
- Ensure wastage is minimized by careful supervision of food preparation methods
- Ensure proper hygienic storage methods are utilized to prevent food loss
Qualifications and Requirements
- Professional and Qualified Chef both in hot kitchen and pastry
- Certificate or Diploma in hotel management
- 10 years of experience in a similar role, often with a background in various culinary styles.
- Strong leadership, creativity, and organizational skills.
- Proven experience as a Chef Trainer, Executive Chef, or Head Chef in a reputable establishment.
- Exceptional creativity and a passion for culinary arts.
- Knowledge of food safety standards and kitchen regulations.
LODGE MANAGERS
Lodge Manager at Mbali Mbali Lodges and Camps Ltd January 2025
Duties and Responsibilities- Communicate with the reservation department on the client’s arrival and departure.
- Greeting and briefing clients with basic information about the Lodges, managing client services during their stay there and resolving any client complaints.
- To ensure all staff are motivated, have a high standard of work ethic, and follow the company procedures at all times.
- Inspect clients’ rooms, public areas, and grounds for cleanliness and appearance.
- Oversee assigned duties of staff to ensure cleanliness, safety, and compliance with the set rules.
- Coordinating back-of-house activities at the Lodge like maintenance and asset management.
- Managing the movement of staff according to company policy.
General Requirements
- Minimum 5-7 years of experience in the hospitality industry Previous experience working in lodges will be highly valued.
- Good English speaking, leadership skills, guest-oriented, strong communication skills
- Flexibility, reliability, and excellent leadership skills
- Positive attitude, and a hospitable service-oriented attitude
- Age between 35-45 years old
